Roasted Parsnip “Fries”   

Cut the parsnips to look like French fries; you can even use a crinkle cutter.  Sweet, nutty and healthier than potatoes. 

1 pound parsnips
2 tablespoons olive oil
1/3 cup freshly-grated Pecorino Romano
2 teaspoons fresh thyme 

Preheat oven to 400 degrees. Peel parsnips and cut into 3-inch long “fries” (about ½-inch wide) to resemble French fries.  Place on a baking sheet; toss with olive oil and sprinkle with salt and pepper.  Roast for 20 minutes, turning once or twice, until golden brown and tender.  Sprinkle with the cheese and thyme.  Serves 4
