Chickpea Flour Cookies
These addictive cookies, made with plain or roasted chickpea flour, have a faint nutty taste and a delicate texture. Chickpea flour is available in Middle Eastern markets and health food stores. Use a cookie cutter with fluted edges, if possible.
8 ounces unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
2 cups roasted chickpea flour, plus more for dusting board
Beat butter in bowl of electric mixer until soft and fluffy. Add 1 cup confectioners' sugar and mix well. Stir in 2 cups chickpea flour and a pinch of salt. Continue to mix until a smooth ball forms. Wrap in plastic wrap and refrigerate 30 minutes.
Preheat oven to 350 degrees. Sprinkle a board with chickpea flour and, using a rolling pin, roll out dough 1/4-inch thick. Using a cookie cutter, cut into desired shapes. Prick each several times with a fork.
Place cookies on ungreased baking sheet and bake 25 minutes until golden. Let cool and transfer them to a board. Sprinkle generously with remaining confectioners' sugar, pushed through a sieve.
