 Yogurt & Lemon Curd Parfait

A glorious way to celebrate the best summer blueberries when they’re at their sweetest and most flavor-packed.  Little blue streaks of blueberry juice stain the ultraric lemony billows of thick yogurt.  Use a good lemon curd imported from England or make your own!

2 cups plain Greek yogurt

½ up lemon curd

3 cups plump ripe blueberries 

In a large chilled bowl, whip the yogurt suing a wire whisk until creamy and flowing. Fold in the lemon curd using a flexible rubber spatula.  Chill.  Wash berries and dry well.  Layer the berries and lemon cream in wine or parfait glasses.  Serves 4
