Seeing Stars and What They Mean: Michelin Magic

The Michelin Guide to restaurants has been around for more than 100 years and claims more gravitas, by sheer longevity, than most other dining guides. Recognition bestowed by this particular institution, known as the Red Guide, can make or break a restaurant -- "especially in France," said Rita Jammet, one of New York's celebrated foodies, at the New York awards celebration last night. Ms. Jammet and her husband, Andre, owned the iconic restaurant La Caravelle in New York. Chef Jammet's roots go back to his family's hotel, Le Bristol, considered one of the finest in France, where the prestige power of Michelin's stars, quite impressively, still charts the course of the French dining scene. Gaining a star, or two, can boost a restaurant's customer base and launch a chef onto the world scene; losing a star can result in profound loss of esteem and business. In Italy, there is generally a different story to tell by those well acquainted with authentic regional cuisine. Arthur Schwartz, author of Naples at Table and The Southern Italian Table, says that his colleagues there stay clear of Michelin-starred restaurants. "They are not Italian," he smiles, "they are French."

But here in New York, the stakes are not quite so high and there is American-style diversity scattered amongst the stars. Although the Michelin ratings still emphasize formality and presentation once indicated by the commandments of French dining, there are some newcomers on the scene. Jaipur-born chef Hemant Mathur was delighted that his restaurant Tulsi retained its one-star status from last year and continues his tradition of being the first Indian chef to receive any stars in New York during his tenure at Devi. He was also proud enough of his heritage to point out that there are two other Indian restaurants in New York deserving of Michelin stars: Junoon and Tamarind Tribeca. In London, where Indian cuisine is an integral part of their culinary landscape, there are only four Indian restaurants deserving of Michelin's attention. Chef Mathur said that Tulsi's star has brought more than a 25 percent increase in business and attention from diners the world over.

Diversity continues among the 2013 guide's shout-out to several Japanese, Chinese, Korean, Italian and Scandinavian restaurants.

Most agree that a Michelin nod can add great verve to the spirit of the chosen chef, their owners and their staff. Oceana's chef Ben Pollinger received his first Michelin star in 2007 and has retained it ever since. "It perfectly fits our business model," he says. "Our customers, both American and international, feel they will get their money's worth because the star is a symbol of excellence and prestige."

The attendees at the swank celebration last night at New York's Capitale on the Bowery, included tuxedoed chefs and chefs-in-whites. The former were sipping champagne in one hand and back-patting their colleagues with the other. It's always fun to see Jean-Georges Vongerichten glide around a room, or watch Eric Ripert sincerely connect with the public, or spot Daniel Boulud and television chef Alexandra Guarnaschelli full of Michelin bonhomie. Even restaurant guru, Drew Nieporent (co-owner of Nobu) was proud to report that his two-star restaurant Corton and chef Paul Liebrandt again received two-stars this year. The latter group that night, uber-chefs Michael White (Ai Fiori), Julien Jouhannaud (Adour), and Gavin Kaysen (Café Boulud), actually spent the evening cooking. There was Agnolotti with butternut squash puree, brown butter and sage; Guinea hen terrine with rutabaga and pickled mushrooms, and Salade de coquillages with perfectly cooked langoustines, coco bean and tomato pesto.

The Michelin guide, published in 23 countries, has three publications in the United States: New York, Chicago and San Francisco. The Los Angeles and Las Vegas guides have been halted. Would be interesting to know why.

The 2013 Michelin Guide is now available for sale on line and is considerably less ($18.99) than any main course in any Michelin-starred restaurant. Their mobile app is less ($.99/24 hours) than a cup of joe. Bon appétit.

Getting Kids to Read and Cook

It's back-to-school month with no letup in our country's interminable decline into child illiteracy and obesity. Each of these epidemics is being addressed by educators, two presidents' wives, chefs, scholars and scores of other professionals -- all of them with competing "solutions." Two books may help empower kids in the way they ought to be: Sunday is for the Sun, Monday is for the Moon, written by Sandra Priest Rose and Glen Nelson (2012), tells the story of how the Reading Reform Foundation of New York has, over the past 30 years, touched the lives of more than 20,000 school kids in kindergarten through third grade by helping them learn to read by understanding word meanings. (It is precisely this age that good, or bad, eating habits come into play, but that's another story.) Deploying multisensory, phonetic techniques, the Foundation trains public school teachers right in their classrooms with some extraordinary results to show for it. And Kids Cook 1-2-3 (written by yours truly in 2006, Bloomsbury) helps empower young children by teaching the foundations of cooking using simple techniques, some ABCs, and 1-2-3s (each recipe uses only three ingredients except for salt, pepper and water.) There is much evidence to support the reality that kids will eat healthy food if they become part of the process of preparing it.

A second-grader asked of Ms. Rose's project: "Why do they call the reading program 'reading reform'? It should be called Reading Intelligence," she went on to say, "because that's how it makes me feel." And one kid said of Kids Cook 1-2-3, "I learned how to measure with measuring cups. I also learned that it is good to try foods you don't know about because you might like them." What's essential to both tasks? Reading comprehension = empowerment.

Since its founding in 1979, more than 6,000 teachers have taken the Reading Reform Foundation's step-by-step course that relies on the simultaneous sounding and writing of syllables and words in order to reinforce the sensory pathways critical in learning. Public schools pay only 20 percent of what is needed for training costs and twice-weekly supervision; the rest is handled by the Foundation. Every Reading Reform consultant visits a school 60 times during the school year. This time-honored approach, built upon a methodology created by Dr. Samuel Orton (a neuropsychiatrist) and Anna Gillingham (a psychologist and educator), begins with letter pairings, or phonograms, which form the basis of the English language. And the rather remarkable news is that the program is replicable in every classroom in America. One needs to wonder why it hasn't taken hold everywhere.

And while they are teaching reading to eager youngsters, may I also suggest teaching cooking? Then all the kids can eat their words.

Sunday is for the Sun, Monday is for the Moon: Teaching Reading, One Teacher & 30 Children at a Time is a slim academic book full of charts and graphs and good results; it is a book meant to save American education. It is meant primarily for teachers, principals and interested parents everywhere. I am one of those.

Brava to the Reading Reform Foundation and to another inspiring program called "Every Child a Reader" -- part of The Children's Book Council. To that I'd like to add "Every Child a Cook," and we'll be on our way to literacy and health in no time.

One More Pot Roast (with a Secret)

I was prompted by this week's article in the New York Times about the health benefits of fermented foods, and by the timing of the year -- where there's a brisket in almost every pot -- (during Rosh Hashanah and Yom Kippur), to share this recipe with you.  It's my Pot Roast with Burnt Onions & Kimchee, first published in Radically Simple two years ago. It is an awesome dish that can be made with brisket, flanken, short ribs, or even beef cheeks.  It may be a bit of a challenge for those of you who keep strictly Kosher (not sure about the availability of Kosher sake and Kosher kimchee) but short of that, this lusty dish fits the requirements of the holiday table very nicely.  It is a gorgeous accompaniment to potato kugel and not at all bad with a tangle of bitter-edge broccoli rabe.  It's a little something "new" under the sun.

But perhaps the gastronomic benefits go way beyond its taste.  According to Sandor Katz (author of "The Art of Fermentation") in Jeff Gordinier's fabulous article "Better Eating, Thanks to Bacteria" -- Mr. Katz believes that bacteria caused by fermentation has not only changed the course of civilization but that "a diverse variety of probiotic bacteria in our guts" go a long way in keeping us very healthy.  Quite honestly, I am not sure what happens to the inherent properties of kimchee when cooked so, if in doubt, eat a little uncooked kimchee as you go along.

Pot Roast with Burnt Onions & Kimchee

Try to find a thick second-cut brisket for the most luscious results, but a first-cut will also do nicely.  Be sure to leave a 1/4-inch layer of fat on top.  Kimchee, a fermented Korean vegetable slaw, is available in the refrigerated section of most Asian food markets.

4-pound brisket 2 tablespoons olive oil 3 pounds onions, very thinly sliced 1-1/4 cups sake 1 cup kimchee 1 fresh bay leaf

Season the brisket with salt and pepper.  Heat the oil in a Dutch oven, brown the meat all over.  Remove from the pot.  Add the onions to the pot and cook over high heat until soft and very dark, about 15 minutes.  Stir in 1/2 cup of the sake, scraping up browned bits.  Scatter the kimchee over the onions; place the meat on top.  Add another 1/2 cup of sake and the bay leaf; bring to a boil.  Reduce the heat, cover, and simmer 2-1/2 hours.  Transfer the meat to a cutting board.  Bring the cooking liquid to a boil and boil 5 minutes, adding the remaining 1/4 cup sake and salt and pepper.  Slice the meat 1/4-inch think across the grain and return to the pot.  Cover and simmer 30 minutes until the meat is tender.  Discard the bay leaf.  Serves 6 or more

Delicious Recipes for a Sweet New Year

Happy New Year and l'shana tova to all those who celebrate. If still deciding what to make, why not try my "Tamarind Brisket" and my "Almost Confit Chicken." May it be a sweet year for everyone. Tamarind Brisket with Spring Shallots and Tiny Potatoes Ask your butcher for the “first cut” and make sure to leave some of the fat on the brisket for best results.

Note: You may cook 2 or 3 potatoes per person (there is a lot of food so you may only want to do 2.)

5 pound boneless beef brisket ¼ cup olive oil 2 pounds peeled onions 1/4 cup tamarind concentrate* 2 cups orange juice 2 cups tomato puree 2 cups beef broth 4 large cloves garlic scant 1/2 teaspoon ground cloves 12 large shallots, (about 12 ounces), peeled and halved lengthwise 1 or 1-1/2 pounds tiny round thin-skinned potatoes (16 or 24), scrubbed not peeled

Preheat oven to 300 degrees.

In a very large enamel casserole with cover, put 2 tablespoon oil. Season meat with salt and pepper and brown over high heat, about 4 minutes per side.  Remove meat.

Cut onions in half through stem end.  Put cut side down on board and slice very thin.  Add 2 tbsp. oil to pot and add onions.   Cook over medium-high heat for 10 minutes, stirring frequently, until softened and golden brown. Return beef to pot and put on top of onions.

Put tamarind in a bowl.  Whisk in orange juice, tomato puree, and beef broth.  Push garlic through a garlic press and whisk into mixture.  Add 1/2 teaspoon salt and freshly ground black pepper.  Pour mixture over brisket.

Bake 1 hour, covered. Turn brisket over, cover and  bake 1 hour longer. Add potatoes and shallots. Bake 1 hour longer.

Transfer brisket to cutting board. Let cool 15 minutes. Thinly cut across the grain and reassemble slices to original form.  Transfer back to pot.  Spoon liquid over meat and cover pot.  Cook 30 minutes longer until very tender. Add salt to taste.  Serves 8

*Available in Indian food stores and Middle Eastern markets.  It comes in small plastic jars and is called concentrate of tamarind.

“Almost Confit” Chicken with Melted Garlic

8 large bone-in chicken thighs, 8 ounces each 14 large garlic cloves, peeled 1-1/2 tablespoons fresh thyme leaves, plus sprigs for garnish 6 fresh bay leaves 1/2 teaspoon ground allspice 1/4 teaspoon freshly ground white pepper freshly ground nutmeg

Preheat the oven to 300 degrees.  Put the chicken in a large bowl.  Press 2 garlic cloves through a press and rub into the chicken.  Add the thyme leaves, bay leaves, allspice, white pepper, and 1-1/2 teaspoons salt.  Grate some nutmeg over the chicken and toss.  Place the chicken in a roasting pan, skin side down.  (I use an enamel paella pan.)  Cover the pan tightly with foil and bake 45 minutes.  Turn the chicken skin side up and scatter the remaining garlic cloves around.  Re-cover and bake 1 hour longer.  Turn on the broiler. Uncover the chicken and broil several inches from the heat for 5 to 10 minutes, until the skin is crispy.  Discard the bay leaves and garnish with thyme sprigs.  Serves 4

The Magic of Three Ingredients

With a touch of irony, I note that simplicity has become trendy. Again. This September's cover story in Food & Wine breathlessly features their best "three-ingredient recipes ever." Real Simple magazine boasted similar stories over the past two years, as did Oprah magazine. I have to smile knowing that my 1996 cookbook Recipes 1-2-3: Fabulous Food Using Only 3 Ingredients launched a quiet revolution that now is being embraced by the food world's upper crust. Not surprisingly in the era of rampant borrowing, there's hardly ever any attribution to the concept's creator, but the nine books in my 1-2-3 series have been nominated for 5 James Beard Awards (with three wins) and one Julia Child/IACP award. Along with a smash hit called The 1-2-3 Collection, (going strong at Apple's iTunes store), these books continue to surface in stores and garner testimonials from devoted 1-2-3 practitioners.

It has been said, "Never trust a simple dish to a simple chef." And it was with that in mind that I devised my daring three-ingredient formula where every ingredient counted except salt, pepper and water.

Like the minimalist movement in art, which reacted to the excesses of abstract expressionism, I wanted to strip away the froufrou that accumulated during the last few decade that came to define "contemporary" or "creative" cooking.

Instead of competing by the number of ingredients they cram into a dish or how high they can pile it on a plate, I longed for the high priests (and priestesses) of culinary wizardry to let the "ingredients speak for themselves" and manipulate them as little as possible.

When Alain Ducasse opened at the Essex House, his press release boasted of cooking "with just a few ingredients and some herbs". Laurent Gras, made headlines at the Waldorf's Peacock Alley by cooking with only two ingredients. Daniel Boulud, said "cooking with three ingredients is the way a chef really wants to and does cook at home." Boston's Lydia Shire once said "some of the world's best dishes have no more than three ingredients."

Today's superstar chefs, when asked about what kind of food they're cooking, give the same trendy answer. "Simple," they say. But as I study menus from hot restaurants around the country, their offerings appear radically complex in both ingredient usage and cooking techniques.

As my three-ingredient philosophy has demonstrated over the years, there's lots of intellectual glue (like using one ingredients several different ways) needed to make simple recipes work. In addition, cooking simply teaches valuable lessons about the way we experience taste. It would be fascinating to get into the "mind" of today's top chefs as they claim to create their own streamlined dishes.

I like many of the recipes put forth by the test kitchen in September's Food & Wine issue. The rules of the game, however, have been altered: Olive oil has been added to the list of "free ingredients." That's a bit like lowering the handicap of a well-seasoned golfer, but the recipes still sound delicious.

I offer you two crowd-pleasing three-ingredient recipes of my own: Lemon-Buttermilk Ice Cream is the perfect dessert for the remaining lazy-hazy days of summer, and Mahogany Short Ribs proved to be one of the Washington Post's favorite recipes. Mahogany Short Ribs (adapted from Recipes 1-2-3) This irreverent merger of foodstuffs results in a tantalizing dish that will amaze and amuse your guests. Prune juice tenderizes marbled ribs of beef, while teriyaki sauce ads a touch of sweetness and salinity. Nice with a bright, young zinfandel. Make sure the ribs are cut in between the bones to make 4 large thick ribs. These are known as "long cut" to differentiate them from "flanken" which is cut across the bone.

3 pounds short ribs, cut into 4 pieces 1 cup teriyaki sauce 1 cup prune juice

Place the ribs in a large bowl. Pour teriyaki and prune juice over ribs. Cover and refrigerate overnight. Remove the ribs from the marinade. Bring the marinade to a boil in a large pot with 1 cup water and 1/2 teaspoon whole black peppercorns. Lower the heat, add the meat, and cover the pot. Simmer for 2 hours, or until the meat is very tender. Remove the meat to a platter. Reduce the sauce for 5 minutes over high heat until syrupy. Immediately pour sauce over the ribs. This is also delicious the next day. Remove any congealed fat from the top of the sauce and slowly reheat ribs in the liquid. Serves 4

Lemon Buttermilk Ice Cream (adapted from Recipes 1-2-3) How luxurious only 2 grams of fat can taste. This is fabulous served over fresh strawberries tossed with sugar and spiked with grappa.

2 cups sugar 5 large lemons 1 quart buttermilk

Put the sugar in a large bowl. Grate the zest of 2 or 3 lemons to get 1 tablespoon zest. Cut lemons in half and squeeze 2/3 cup juice. Add zest and juice to the sugar and stir until sugar dissolves. Add the buttermilk and a large pinch of salt and stir until completely smooth. Chill well and freeze in an ice cream maker according to the manufacturer's instructions. Serves 6 to 8

Two Veggie Summer Reads: Dirt Candy and Welcome to Claire's

Dirt Candy Cookbook: Flavor-Forward Food from the Upstart New York City Vegetarian Restaurant, by Amanda Cohen & Ryan Dunlavey (Clarkson Potter Publishers, 2012) I've always wanted to go to New York City's provocatively named restaurant "Dirt Candy" (I mean who wouldn't?) but have yet to do so. Instead, I am experiencing the darling, Michelin-recommended vegetarian dining destination in a more vicarious way... with chef-owner Amanda Cohen's new book. It is a deliriously ebullient graphic novel-style trade paperback and it landed on my kitchen table just this week. Generally, I take cookbooks immediately to bed, but this one I decided to read in front of my refrigerator, just in case I got the urge to try a recipe on-the-spot. Sometimes I get urges like that.

Amanda Cohen, who is one smart gluten-free cookie, has written, with super-cool artist Ryan Dunlavey, what appears to be the first graphic novel cookbook. With its comic-strip line drawings and bubble thoughts, it is not necessarily a form meant to compete with Julia Child's Mastering the Art of French Cooking. It might, however, get a new generation of young acolytes cooking. But do not misconstrue: The recipes are totally savvy and mouthwatering. Cohen's advice, including the realities and vicissitudes of opening your own place, is professional and instructive, and sometimes very funny.

I love what Ms. Cohen, the first vegetarian cook to be invited to compete on Iron Chef America, has to say about her approach to flavor-forward food. "Anyone can cook a hamburger," she declares," but leave the vegetables to the professionals!" Brilliant. Her compelling recipe line-up includes Fennel Salad with Candied Grapefruit Pops & Grilled Cheese Croutons; Smoked Sweet Potato Nicoise Salad with Fried Olives & Chickpea Dressing; Asparagus Paella with Grilled Vegetables & Yellow Tomato Saffron Broth; Stone-Ground Grits with Pickled Shiitakes and Tempura-Poached Egg, and Red Pepper Velvet Cake with Peanut Brittle and Peanut Ice Cream. She even makes dehydrating look easy. The recipe for her $10,000 prize-winning Portobello Mousse alone makes the book worthwhile.

With the sustainable food movement going strong, and farmers and compost becoming new symbols of virility and virtue, the associations of "dirt" with all good things is an interesting one. Check out "Chocolate Dirt: Is It Art or Is It Dinner?" and just the other day at a friend's glamorous birthday party, catered by Great Performances, we were served freshly dug radishes in a pot of pumpernickel crumb "dirt."

Welcome to Claire's: 35 Years of Recipes & Reflections from the Landmark Vegetarian Restaurant, by Claire Criscuolo, (Lyons Press, 2012)

Claire Criscuolo is the much-beloved "Maven of New Haven." Iconic and eponymous, Claire's Corner Copia has been feeding foodies just outside the gates of Yale as well as servicing an entire community of vegetarians for decades. Her fourth cookbook, Welcome to Claire's: 35 Years of Recipes and Reflections from the Landmark Vegetarian Restaurant is flying off shelves as fast as her Lithuanian Coffee Cake is flying off the brightly polished counter at her bustling café. Claire, a certified culinary professional and registered nurse fulfills a promise and a dream. Her recipes are healthy and healthful, vegan and kosher! She provides a home-away-from-home for almost anyone who lives to eat. I was one of those lucky ones this summer -- as we visited our daughter who was in a teen program at the university and ran to Claire's as often as we could for her classic Tomato-Barley Soup, fabulous oatmeal-blueberry-pecan-buttermilk pancakes, and great coffee. The book, chock-a-bloc with 350 recipes, each marked with helpful symbols -- GF (gluten-free) and V (vegan) has a vast array of offerings. Artichoke, Basket Cheese, and Parmesan Risotto caught my eye as did her Quesadilla with Caramelized Onions, Quince Preserves and Cheddar with Horseradish. Anyone looking for themes and inspirations for preparing tofu and tempeh, will also be smitten.

All roads lead to Claire: Her commitment to local and organic sourcing grows exponentially (including growing her own vegetables are herbs in her backyard) as does her outreach to the community. And it all began 35 years ago when she used her engagement ring as collateral for the loan to open her restaurant with her husband Frank. (Sadly, Frank passed away this year.)

Tonight, I will make her organic Arugula Salad with Lemon, Honey and Goat Cheese, and in the Fall I look forward to making her aptly named Fall Renewal Soup -- made with split peas, garlic, kale, cauliflower, broccoli, basil and flax oil). On the Road to Morocco (and Madrid)

I hope you are all having a wonderful summer. My husband, daughter and I are off to Morocco and Madrid and will be traveling for two weeks (I hope our house guests enjoy themselves!). We are returning to places we have loved in the past and visiting a dear friend in Morocco whom we haven't seen in 14 years.  His family has grown as has ours. It's been a time of rapid growth in the world and I know we will see many changes on our journey. Yet some images remain steadfast. I can already inhale the sweet fragrant mint tea that awaits us in Marrakesh. I look forward to "breaking bread" with our friend's family during Ramadan. Excitement rushes through me as I imagine a slow walk through the Prado; tapas at 11 p.m., and a bit of sultry Flamenco afterwards. It will be a joy to see all of it through the eyes of our 16-year-old daughter. During the next two weeks I will be sharing reviews of two new favorite vegetarian cookbooks, some news from our trip, and who knows what else. In the meantime, here are two recipes from Radically Simple -- with evocative flavors from Morocco and Spain -- meant to whet your appetite on a balmy summer night. Couscous Salad with Dates & Toasted Almonds

I developed this recipe for Bon Appetit magazine, and I'm told it became one of their most popular salads. Quite versatile, it can be part of a mezze offering or a great accompaniment to roast lamb. For best results, do not refrigerate and serve at room temperature.

1/3 cup slivered almonds scant 2 cups couscous 1-1/2 cups cooked (or canned) chickpeas 1/4 cup extra-virgin olive oil 2 scallions, finely chopped, white and green parts 10 large dates, pitted and finely diced 1 teaspoon ground cardamom grated zest and juice of 2 lemons 1/3 cup coarsely chopped cilantro

In a large saucepan, bring 2 cups of salted water to a boil. Lightly toast the almonds in a small skillet over medium heat until fragrant, about 2 minutes.  Set aside. Add the couscous to the boiling water and stir. Cover and remove from the heat. Let sit for 4 minutes. Uncover and fluff with a fork. Transfer to a large bowl. Add the almonds, chickpeas (drained and rinsed), olive oil, scallions, dates, cardamom, lemon zest, and 3 tablespoons (or more) lemon juice.  Stir in the cilantro, salt and pepper.  Serves 6

Avocado Soup with Fino Sherry

If you pre-chill the ingredients for this awesome soup, it can be made in a minute!  It has a mesmerizing flavor and velvety texture.  If making the soup ahead of time, chill well and add the sherry (and optional garlic) at the very end.  More awesome still:  crumble blue cheese on top and serve with Marcona almonds.

2 medium-large ripe avocados 3 cups chicken broth, chilled 2 cups buttermilk, chilled 2 tablespoons fino sherry 1 small garlic clove, optional

Cut the avocados in half and remove the pits. Scoop the flesh into a food processor. Add the broth and 1-1/2 cups of the buttermilk. Process until very smooth.  Stir in the sherry and garlic, pushed through a press. Add salt and freshly ground black pepper to taste. Ladle into bowls and drizzle each serving with a bit of the remaining buttermilk which will float on top. Serves 4 or 5

I knew Julia up close: I cooked for her; shared dozen of meals in a variety of cities; drank vintage wine and listened to music together, and celebrated with friends at book parties, engagement parties and restaurant openings (sometimes our own). I worked in the industry dominated by Julia's spirit and accomplishments for most of my career as a professional chef. So it was with avid interest that I devoured her life's story whole. Dearie: The Remarkable Life of Julia Child -- told with affection and reverence by author Bob Spitz - lifts an American icon from the cauldron of celebrity into a dish of comfort food. The book chronicles an appealing personal journey defined by obstacles, perseverance, and an endearing quest to satisfy her many appetites.

Spitz, who distinguished himself as the über-biographer of The Beatles, is a rightful heir to Julia's life story. Not only were they colleagues who traveled, ate, and gossiped a bit, but Mr. Spitz's keen insights and artistry, help tell her story through a historical prism that spans a century. The book, to be released this week (to coincide with what would have been Julia's 100th birthday on August 15th), illuminates the shifts in culture, cuisine, customs, and class, and examines the struggles of a woman, born in California in 1912, searching for identity. The book is hard to put down, despite its heft (557 pages), but few lives are worthy of such delicious scrutiny.

Julia's life, while charmed and privileged, came with its own profound struggles for self-identification and meaning. I was struck by the meandering of Julia's journey - until her thirties, when she enlisted in the war effort as an office worker for the OSS. The underbelly of her early story includes a lackluster attitude towards school (with grades to match at Smith), a spiritual yearning that never seems to materialize, a jagged relationship with her ultra-rich, ultra-conservative father, and the subsequent idealization of men. Despite all of it, what becomes crystal clear is Julia's extraordinary self-confidence and almost super-human work ethic that continued until her late eighties when she was still master of stage and TV screen. Mr. Spitz, however, does not shine Julia up for public consumption; he keeps her flaws and foibles intact. Julia's husband, Paul Child, emerges as an equally compelling personality, one who was hugely responsible for who, and what, Julia became. "Paul filled a hole in Julia's development," Mr. Spitz observes. Her story is also a powerful look at the allure of food that today is perhaps too available to all of us. For Julia it was that first meal in Rouen, France - a fish, cooked in butter and parsley, with insouciant simplicity, at La Couronne in 1948 -- that hypnotized her.

For a Pasadena society girl to ultimately find a calling when nearing 40 is an interesting enough read, but to become a media icon at age 50 is quite another story. All 6 feet, 3 inches of Julia emerged on television in homes all over America, and from that time forward -- more than three decades worth -- we were treated to indelible images of omelettes, a chorus line-up of raw chickens, bubbling copper sautoirs of boeuf bourguignon, laughter, and learning.

Even more than her recipes, however, was her out-sized personality that served generations of women well beyond the kitchen. (It is interesting to note that Betty Friedan's "The Feminine Mystique" was published around the same time as Mastering the Art of French Cooking.) In Dearie, Julia's multi-generational imprint on what then was our gastronomically myopic culture is expertly textured by Mr. Spitz, who makes Julia's personal and professional trajectory of targeted historical importance. Whether or not you grew up watching Julia on TV, or ever mastered the art of French cooking, you will no doubt get a vicarious culinary education by the book's end. Julia's dining experiences, cooking adventures, and culinary travails are enough to make you swoon.

Julia encouraged Bob to write her story. Unhappy with an earlier biography, Appetite for Life, written in 1997 by Noël Riley Fitch, Julia felt that she appeared lifeless and "already dead." Gauging by the multitudinous events slated for the 100th birthday celebration of Julia this week, this month, and in the coming months - including an all-day seminar at Radcliffe, the re-opening of Julia's Kitchen at the Smithsonian, and hundreds of restaurants dishing up Julia's favorite recipes -- Julia has never been more alive in the hearts and minds of those who grew up with her and ate and drank her dreams. Dearie: The Remarkable Life of Julia Child is then, a much-appreciated, well-timed gift to us all.

Singapore Food Critic Loves My Mac-n-Cheese

It's amazing how recipes circulate around the world. Back in the early '80s it took about two years for "blackened redfish" to migrate from New Orleans, where it was invented by Paul Prudhomme, to Chicago. But that's because the primitive media of culinary exchange were cooking magazines and Wednesday's newspaper food sections.

By the time the blackening fad arrived in Australia, redfish had been over-harvested to near-extinction, recovering only after trendinista chefs moved onto something else. These days, of course, food news and recipes shoot around the globe in no time flat via the Internet -- which is why we're suddenly inundated with gilded "gourmet" hamburgers and bizarre pizzas everywhere in the United States.

I'm reminded of this by an email that just arrived from Singapore, where one of my own recipes recently appeared. Two years ago, Michael Whiteman, my husband The Restaurant Consultant, worked with Richard Helfer, the former far-thinking president of Raffles Hotels, to help create a fast-casual rotisserie chicken restaurant prototype that was slated to colonize numerous corners of Singapore and then beyond.

On one of his trips he brought as a gift a cookbook, which I'd written with my daughter, called Eat Fresh Food: Awesome Recipes for Teen Chefs. Every recipe is healthful and colorful, with major emphasis on swapping fresh vegetable purees for otherwise fattening cream and butter. For example, zucchini gets whirled into a gorgeous jade-green sauce for pasta primavera; cauliflower gets star billing in a delicious side dish called "Looks Like Mashed Potatoes;" and creamed spinach is enlightened with a puree of (yes!) cottage cheese.

Helfer named his chicken chain Charly T's, after a fictional gastronome who roamed the globe in search of recipes that would sate his infinite lust for chicken. Knowing that go-withs and flavorful sauces are at least as important as a well-lacquered bird, Helfer paid lots of attention to side dishes, one of which he happened upon in the aforementioned cookbook.

A Singaporean food writer alarmingly named "Little Missy Greedy" recently visited the newly opened second outlet of Charly T's to write about how to make the restaurant's celebrated mac-and-cheese -- and there it is, straight from Eat Fresh Food: my singular recipe that incorporates, among other ingredients, red peppers, chipotle powder, honey and cauliflower florets. Its gorgeous bright orange sauce is made from cooked red bell peppers and garlic that get pureed together until silky. The seven step-by-step photos all have captions in Chinese, which happens to be Greek to me -- but you can make this at home with your kids and be rewarded for being a terrific parent. You'll love it because it looks like it's oozing with cheese, but it has much less fat and is more nutritious than regular mac-and-cheese. And now it's among the trendiest dishes in Singapore. Singapore Sling, anyone? MAC-AND-CHEESE with Cauliflower and Creamy Red Pepper Sauce

4 oz. very sharp yellow cheddar 2 medium red bell peppers, about 12 oz. 3 large garlic cloves, peeled 1 tablespoon unsalted butter 1 teaspoon honey 1/8 teaspoon chipotle chile powder 8 oz. ziti or penne rigate (or elbow macaroni) 3 cups small cauliflower florets 3 tablespoons finely chopped chives

Procedures

Shred the cheese on the large holes of a box grater and set aside. Cut the peppers in half and remove the seeds. Cut peppers into 1-inch pieces and put in a small saucepan with ½ cup water. Cut the garlic in half, lengthwise, and add to the saucepan. Bring to a boil, lower the heat to medium, and cover. Cook for 15 minutes, or until the peppers are very soft. Transfer the contents of the saucepan, including the water, to a food processor or blender. Add the butter, honey, chile powder, and salt to taste and process until very smooth. Return to the saucepan. Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cauliflower and cook for 12 minutes, or until tender. Drain well and shake dry. Transfer to a large bowl. Heat the sauce and pour it over the pasta. Add the cheese and stir well. Add salt to taste. Sprinkle with chives. Serves 4 to 6

Here are a few recipes for a wonderful summer meal:

Cucumber-Coconut Bisque This is incredibly refreshing and lasts, surprisingly, up to 5 days in the fridge. Even kids love it. Make sure all the ingredients are icy cold before assembling.

2 large cucumbers, peeled 1 1/2 cups plain Greek yogurt 1/2 cup coconut milk, chilled 4 scallions 1/4 cup chopped fresh mint, plus julienned mint for garnish 1 1/2 teaspoons cumin 2 tablespoons olive oil, plus more for drizzling 1/3 cup finely minced red bell pepper

Cut the cucumbers in half lengthwise and scrape out the seed with a spoon. Cut the flesh into pieces and put in a blender with the yogurt and coconut milk. Sliver the dark green parts of the scallions and set aside for garnish. Chop the white and light green parts and add to the blender with the chopped mint, cumin, and oil. Process for several minutes, until smooth; add salt. Ladle into bowls. Garnish with slivered scallion greens, julienned mint, bell pepper, and a drizzle of oil. Serves 4

Grilled Tuna with Lemony Tahina, Greens & Pomegranate Seeds This dish is made with both fresh cilantro and ground coriander seed. The first perfumes the fragrant tahina sauce; the latter contributes its aroma to the fish.

1/2 cup tahina 1/3 cup fresh lemon juice 1 medium garlic clove 1/2 cup chopped cilantro 5 tablespoons olive oil 4 thick tuna steaks, 6 ounces each 2 tablespoons ground coriander 1 1/2 teaspoons ground cumin 4 ounces mesclun 1/3 cup pomegranate seeds

Combine the tahina, lemon juice, garlic, and cilantro in a food processor. Process, slowly adding 1/2 to 2/3 cup cold water, until smooth and thick. Add salt and pepper. Drizzle 3 tablespoons of the oil all over the tuna steaks and season with salt. Mix the coriander and cumin on a plate; rub into the fish. Heat a ridged cast-iron grill pan over high heat. Sear the tuna 2 minutes on each side. Keep the tuna very rare. Toss the mesclun with the remaining 2 tablespoons oil. Add salt and divide among 4 plates. Place the tuna on the greens. Pour the tahina sauce over the fish and scatter with the pomegranate seeds. Serves 4

Orange Flower Strawberries & Mint Sugar While this recipe can be made all year long, it is sensational right now -- when berries are at their peak.

2 pints very ripe strawberries, hulled and halved 1/2 teaspoon orange flower water 6 tablespoons granulated sugar 1/4 cup coarsely chopped fresh well-dried mint leaves 1/2 cup crème fraîche 2 tablespoons confectioners' sugar

Toss the berries with the orange flower water and 1 tablespoon of the granulated sugar. Put the remaining 5 tablespoons granulated sugar and mint in a food processor and process until incorporated. Divide the berried among 4 glasses and sprinkle with the mint sugar. Combine the crème fraîche with the confectioners' sugar and dollop on top. Serves 4

Food for Thought: Two Lovely Books for Summer

Here are two wonderful summer reads about food and family from exotic climes: One is a memoir, the other, a cookbook. Pomegranates and Grapes by Nuray Aykin, is the autobiography of a young Turkish woman, turned PhD, who finds love in America while holding onto her heritage -- especially her cuisine. Her personal journey, punctuated, or defined by obstacles, perseverance and an enduring love of food, is told through taste memories that make you hunger for more. Sally Butcher's cookbook, is a lovely companion to Ms. Aykin's evocative food tales. The New Middle Eastern Vegetarian: Modern Recipes from Veggiestan, is a treasure trove of authentic recipes, bursting with flavor and sense of place. 2012-07-09-183197814697874979991Pic.jpgPomegranates and Grapes: Landscapes from My Childhood By Nuray Aykin (iUniverse 2012)

Nuray Aykin, author of the charmingly titled Pomegranates and Grapes, emerges as a masterful wordsmith, connecting readers to her story even though we don't know her, or her name. We learn about a remote upbringing in towns scattered across the landscape of Turkey and are moved by a solo journey to Buffalo, New York, to secure a doctoral degree amidst years of illness and "foreign-ness." We commiserate after the breakup of her marriage, and enjoy the success that comes after hardship and strife. The food of her country anchors her adventures and evokes a Mediterranean way of life that buoys her spirit throughout.

Yet strikingly, the story is not really meant for us at all. It is, instead, a retrospective diary of sorts to her 18-year old son who is leaving for college. Lest the past go unremembered, Ms. Aykin uses the word avlu, a greeting or entrance area, to welcome her son into her life's story, in order for him to better understand his own.

The cuisine of her childhood plays a starring role: She writes,

"We would sit under the shade of a walnut tree and eat our lamb chops in cool weather. At the houses we visited, they would serve sikma, made by filling bazlama (bread dough) with feta cheese, onions and parsley. After you wrap the hot bazlama around the filling you need to squeeze it with your hands, almost leaving imprints of your fingers on it to warm up the fillings. We would drink ayran (a salty yogurt drink.) The foam of ayran would fill half of our glasses, just like beer, and leave a white mustache every time you took a sip. We had an abundance of fruits and nuts -- apples, pears, plums grapes, black and white mulberries, almonds, walnuts and pistachios."

The images are delectable.

With a PhD in industrial engineering, Ms. Aykin has a rare gift of combining laser intelligence with motherly passion. Her story is a cultural and emotional "dig" into the archeology of nuclear and extended family relations, stereotypes of grandparents and women, and the exquisite simplicity that binds us through food and love -- whether we are in Istanbul or Buffalo; whether we are child or parent, leaving or left behind.

But where Ms. Aykin teaches us about her native cuisine in prose, I craved the immediacy of first-hand experience. Enter: Ms. Butcher's cookbook.

It's rare for me to read a cookbook cover to cover, but a trip to Veggiestan (a fictional region including Turkey, the Levant, and Middle East) while sitting in bed with a cup of mint tea, was irresistible. I longed to "taste" the food of places I had not yet been -- Turkey, Iran, Iraq, Greece and Lebanon, to name a few -- and so this evocative romp would have to suffice for now. Immediately I turned to the recipes from Turkey as Ms. Aykin had whetted my lips for aryan (recipe below), and more. In Ms. Butcher's engaging book she boasts about the Turks' impressive array of bread. "Unsurprising," she says, "if you study a map of the country. It extends in all directions: south to the Mediterranean, north to the Black Sea, permeating ever easterly. Its cuisine reveals a huge number of influences," and she has included recipes for the two most intriguing and versatile breads: yufka and pide. The former is soft and chewy and made with yogurt; the latter, is a "wrap" of sorts and thin as a wafer.

Knowledgeable as all get out, Ms. Butcher is a London-based food writer who, with her husband, runs the renowned Persepolis -- a Middle Eastern food store where, according to fans, her enthusiasm and tenacity is in no short supply. This comes bursting through the pages of her new book -- transforming scholarly authenticity into joy. And while you will find many vegetarian recipes from Turkey -- including the populist red pepper paste, olive oil-drenched egpplants, everyday beans, and lahmacun (a kind of Turkish pizza), the array of recipes from elsewhere in Veggiestan is dazzling in their scope and in their use of exotic (but findable) ingredients: orange flower water, turmeric, saffron, rose petals, barberries and pistachios. Swooning, yet? Ms. Butcher has a gift for recipe titles: Melons with Wings; The Soup of Ezo the Bride; Palestinian Upside-Down Rice, Burghlers (you can guess what these are), Persian Magazine Spinach Balls, and Black-eyed Pea and Lemon Hotpot. A recipe for Sweet Hummus, made with date syrup, cinnamon and cardamom, intrigues.

"The Strange Phenomenon of Salted Drinking Yogurt" Makes 4-1/2 cups

2 generous cups plain yogurt 2 generous cups cold water 2 teaspoons salt 2 teaspoons dried mint

Whisk (and I do mean whisk) the yogurt and water together. Add the salt and the mint, and chill well. Serve over ice.

Polenta: The Next Big Thing?

Not long ago, in the epicenter of Brooklyn's culinary scene, I had a delightful dinner in a place called Osteria il Paiolo. Williamsburg, Brooklyn, home to some of the world's hippest dining venues, is a multi-culti morass of righteous Jews, old-time Italians and Dominicans, and newly-converted food passionistas with young families and big dreams. It is also home to one of the only places I know that features polenta as its calling card, authentically made in an "il paiolo" -- a large unlined copper pot -- the traditional vessel in northern Italy in which to s-l-o-w-l-y stir ground cornmeal into boiling water and salt until thick and creamy. It is sturdier than porridge and more sublime than its humble ingredients might imply. I was no more than 19 years old when I first met its acquaintance during a trip to northern Italy. It was there that I had one of the my most memorable dishes of my life: A thick slice of Gorgonzola dolce onto which was poured a stream of hot buttery polenta across its girth. An exercise in simplicity, its creamy texture and unexpected melding of flavors and fragrances, was downright sinful. And while not the traditional form polenta usually takes, it remains a love-at-first bite memory. While the good people of Tuscany are known as "bean-eaters" because of their culinary proclivity towards legumes, the Piemontese locals are known as polentone. Apparently, everyone in Piedmont eats polenta all the time, and have done so before the Roman empire! (At that time, polenta was made from other grains such as millet, barley, and farro. Corn, or maize, appeared in the 16th century.)

That said, I was excited to try the polenta, and all the other good things I had heard about, at the dining spot loosely translated as "the polenta pot." It is an osteria which, in Italy, connotes a rather casual restaurant where the owner is also the host: Enter Alex Palumbo. Alex, a native of northern Italy's Piedmont region, was primed to bring the signature dish of his family's kitchen to slightly tonier environs. Amidst a sprawl of white table-clothed tables in an industrial modern space, one can dine very well indeed. In addition to the myriad ways to eat polenta, topped with tomatoes and quail, with shrimp and rosemary, with fontina, are exemplary antipasti and main courses -- we especially loved the homemade sausage with savory cabbage served in a terracotta casserole, and my husband said his roasted quail, prepared with pancetta, cream and sage, was the best he ever had. Good, too, was the unusual pappardelle al cioccolata, chocolate pasta with a wild boar and vegetable ragu.

Unbeknownst to me, authentic polenta is made with only water and salt, not the butter and cheese we have come to expect. But along the way, the latter ingredients have become commonplace. And while the ingredients may be 1-2-3, the mastery is in the preparation: Polenta must be slowly stirred for up to 45 minutes for its requisite creaminess and flavor. There are huge copper paiolo pots that have electric motors attached, but at Alex's osteria, everything is lovingly stirred by a mano (by hand.) Alex gets his heirloom polenta -- which is coarse and toothsome -- from a "secret source" in Italy and claims that no one else in New York (ergo the country) has it. At last count, the kitchen is stirring up more than 60 pound per month, up from 10 pounds when he first got started, not so long ago. Clearly, the locals are catching on.

In my own kitchen at home, I make polenta with tomatoes and Parmigiano-Reggiano as one of my ultimate comfort dishes, and on occasion, indulge in that time-honored memory of gorgonzola topped with steaming polenta. Only now I gild the dish with a tuft of balsamic-tinged wild arugula and anoint it all with my best extra-virgin olive oil on top. And I am still enamored of Colman Andrews' polenta with oranges and olive oil from his wonderful book, Flavors of the Riviera. The potential for polenta is promising, perhaps turning us all into polentone one day.

"Fresh" Is the New Word in Olive Oil

Chile has emerged as the promised land for premium extra-virgin olive oil, the kind of unconventional gift that leaves a lasting impression on your palate and finesse on your dinner table. Green and wet as droplets of morning dew, olive oil from Chile boasts a tree-to-bottle experience right in the orchard. A bit poetic perhaps, but the tiny country is counting on its miraculous climate and feral "terroir" to hoist its sparkling olive oil onto the world market. Where to start? At Todd English's restaurant "Olives" in New York City. On a clear night in June in New York City, 30 journalists and eager foodies sat at one long table to sample the inspired food of Chef English, but more importantly to learn why Chile has landed as prize winner in international competitions -- titles previously held by the more familiar domains of Italy, Israel, and even the U.S. The ring leader in the effort is Hugo Regojo, a Spaniard no less, who turned down a coveted life in the Foreign Service to become a farmer. He has joined the ranks of other pioneers, modern Chilean "Olivareros," to cultivate the riches of Chile's Central Valley.

Olive oil is a sacred food (or ingredient) and so I pay close attention to it. I also happen to love it. At home I use only two kinds of oil and they are both olive oils. A regular blended oil from a good producer, and extra-virgin olive oil -- from Italy, California, Israel, Greece, Spain, or sometimes France, when I can find it. Yet I am intrigued with the new offering from Chile with its golden-greenish hue, notes of almonds and artichokes, and its fresh "alive" quality. Many years ago I tasted a similar "freshness" at the Antinori estate in Italy. They had just developed the technology to "freeze" their exquisite oil almost immediately after extracting. At room temperature, the olive oil tasted almost "molecular" -- an exaggeration of itself. It was nice to get reacquainted with that decisive palate memory many years later.

Olive oil was first mentioned in the Hebrew bible in the 13th century B.C. -- and there is evidence that it has been around a lot longer than that -- as far back as 4000 B.C. As we now know, it is extremely healthy -- high in antioxidants, and monounsaturated fats -- particularly oleic acid -- and cancer-fighting polyphenols. But buyer beware. There are too many flawed olive oils on the market that suffer from rancidity and fustiness -- a word used by olive oil experts to define the "off" flavor caused by anaerobic fermentation of the olives before they are milled. Rancidity, on the other hand, is the result of a secondary oxidation process resulting in a strong smell of paint or varnish.

Chile is selling its premium extra-virgin olive oil to chefs in great restaurants and it is slowly appearing on supermarket shelves. Since the olives are harvested, cold-pressed, and bottled right at the orchard with every bottle you know you're getting just their olives -- and so it has integrity. You are not getting a blend of olives from all over the world, like I discovered in the brand I was using! The climate in Chile is perfect -- cold rainy winters and hot, dry summers let olives reach their optimum maturity -- revealing the great taste and perfume of the fruit (remember olives are fruits). It is also one of the few countries which is free from the dreaded olive fruit fly (bacteria) which severely affects the quality of the oil.

I use olive oil for everything and I bake with it all the time. In my book Eat Fresh Food, my daughter and I invented a lovely Italian-style chocolate chip cookie made with olive oil, as well as tender muffins and a delicious zucchini-banana bread. (You can find these recipes on my blog)

Using olive oil in new ways has always fascinated me. I was the first to invent olive oil ice cream in the mid-80s for the International Olive Oil Council. (Pastry chef Meredith Kurtzman makes it at Otto.) I was the first to freeze olive oil to use instead of butter to emulsify sauces and make them healthier. And I often make a quirky recipe from Colman Andrews (adapted from his book Cooking from the Riviera) for hot polenta topped with fresh orange segments and drizzled with extra-virgin olive oil. And that night at Olives, I had a mini martini laced with olive oil from Chile -- and it was very good, indeed.

One Pea Pod/Scallops and Pea Puree

What did I have for lunch yesterday?  One perfect pea pod.  No kidding.  I was rushing like crazy and forgot to eat lunch.  I was at my favorite stand at the Union Square Farmer's Market buying micro-greens, edible flowers, pink-stemmed buckwheat sprouts, and more.  Windfall Farms carries "boutique" produce unlike any other and that's where all the photo/prop/food styling folks go.  Including me...and I have a photo shoot for Lenox China coming up.  Anyway, I was also thirsty and the nice farmer said, "here, eat a pea pod."  In one fell swoop, I tasted early summer...I felt satisfied...and my thirst was quenched. That's it. A pea pod bursting with tiny fresh peas.  The essence. Nothing more. As promised yesterday on my Facebook page, I present the recipe that got a surprise rave from cooking maestro Arthur Schwartz who said he made my "Seared Scallops on Sweet Pea Puree" from Radically Simple: Brilliant Flavors with Breathtaking Ease.  He said "be mindful when browning the scallops," but he also said that the timing was perfect and that it was delicious.  I think he added a burst of fresh lemon juice and so may you. I hope you enjoy it as much as Arthur and his guest did.

This dish is an adaptation of one of the most beloved recipes from my original Recipes 1-2-3, but I've updated it with dry vermouth and a garnish of trendy pea shoots. It is a dish for any time of the year because frozen peas, always available, provide the base of the lovely buttery puree, but I suggest you try it soon with super-fresh peas from the farmers market.  If using fresh peas, shell enough peas (from their pods) to get about 1-1/2 cups and follow the recipe, cooking the peas as long as needed to get tender but still bright green.

Seared Scallops on Sweet Pea Puree Get the best freshest scallops available.  Make sure they haven't been "dipped" in a solution or you will have difficulty browning them.

10 ounces frozen petits pois, thawed 4 tablespoons unsalted butter 20 medium-large sea scallops 3 tablespoons dry vermouth handful of pea shoots, mache, or microgreens

Put the peas in a saucepan with water to just cover. Bring to a boil and boil 2 minutes (longer if using fresh peas.) Drain well and save 6 tablespoons cooking water. Put the peas, 2 tablespoons of the butter, and the reserved cooking water in a blender.  Puree until very smooth and thick.  Add salt and pepper.  Return to the saucepan and keep warm.   Melt 1 tablespoon of the butter in a large skillet.  Season the scallops and add to the pan.  Sear over high heat 2 minutes per side until golden and just cooked through.  Spread the warm pea puree in the centers of 4 large warm plates.  Arrange the scallops on the puree.  Add the vermouth and remaining 1 tablespoon butter to the pan. Cook over high heat until syrupy, about 30 seconds.  Pour over the scallops and top with pea shoots.  Serves 4

Tastes of the Week

June 11 thru June 18, 2012 A sensational lunch at Lincoln (at Lincoln Center) prepared by chef Jonathan Benno (formerly at Per Se), sponsored by DeBragga, affectionately known as New York's Butcher. The lunch celebrated the efforts of Niman Ranch family of farmers whose community of more than 725 farmers raises their cattle, hogs, and lambs with utmost care. They have changed the standards of sustainable practice and have influenced a new generation of farming systems. The menu rocked with crispy pig trotters, "testa" (headcheese), ravioli d'agnello (lamb neck, tongue, sweetbreads, and pecorino) in a lamb sugo, 40-day dry-aged ribeye of beef, with greenmarket tomatoes, arugula and balsamico, and for dessert, something intelligently conceived and very delicious -- a triptych of chocolate torta with guanciale and sea salt, biscotti al lardo, and crostata ai frutti di bosco made with dry-aged beef fat! Fabulous! Much praise all around -- to DeBragga, Niman Ranch, the farmers, the chefs, and the beneficent earth.

Had a lovely young neighbor over for dinner. She's from South Carolina and told us about "chicken bog" (a native dish) and flounder gigging (a local past-time.) It may be time to learn more about the "low country lifestyle!" Katie's a vegetarian, though, and I made her "rutabaga steaks" while we ate my husband's ever-so-slow-cooked country ribs (smoked over charcoal and cedar).  We also enjoyed a last-minute carrot salad (julienned and lightly steamed) tossed with caramelized onions, balsamic vinegar, and slivered basil. Chicken bog, by the way, is a pilau of chicken, sausage, celery, and moist (but not soupy) rice and spices.

The most creative and best pizzas ever at the newly-decorated Keste on Bleeker Street. Imagine sinking your teeth into these:  Ricotta e Noci, made with "cream of walnut", fresh ricotta, homemade mozzarella, pecorino romano and basil, or Salsiccia e Friarielli -- made with rapini, Italian sausage, imported smoked mozzarella, and extra-virgin olive oil.  Keste has gluten-free pizzas (senza glutine), white pizzas, red pizzas, "night and day" calzone, and stuffed pizzas, too -- da morire (to die for.)

Fresh herring from Holland with Cantillon lambic beer.  A great pairing!  Thanks, Jimmy Carbone!  (As tasted on Cooking Today radio show).

Cold slow-cooked country spare ribs with roasted beets and white bean salad at home, washed down with Vinas de Balbo (bonarda-malbec blend) from Argentina.

Very good strawberries, lightly sugared and showered with slivered fresh mint from my window box. June is busting out all over.

A Father's Day Steak

While I was "guest host" on Martha Stewart's "Cooking Today" Sirius XM radio show this week, we covered lots of topics including craft beer, olive oil from Chile, Julia Child's new biography, Dearie, written by celebrity author Bob Spitz, "genius recipes" with Kristen Miglore from food52, and radically simple cooking with New York Times "City Cook" columnist, David Tanis. It was a great week. We also listened to the "hot chill" music of singer/songwriter Audrey Appleby, whose two songs, "The Garden" and "Ladies Cheap Cocktails", had everyone in the studio smiling and begging for more! Check it out at www.magicdance.com. Audrey's new album soon to be released is called Ladies Cheap Cocktails. Should soar to the top of the charts. And there were lots of requests for my Reddened Rib Eye with Pimiento Cheese -- the perfect steak for Father's Day. The magical rub -- made from sweet paprika, smoked paprika, and sumac may require a trip to an upscale food store or spice market, but these are three ingredients I now always have in my pantry. You should, too. They make a ruddy crust for the steak that lights up your taste buds -- with sweet, sour, salty, smokey notes. Topping with homemade pimiento cheese makes this a sundae for a cowboy. It's a "hot chill" kind of dish.

Serve with a bowl of my amazing cauliflower-potato puree (recipe below). What looks like the most luxurious offering of buttery, smooth mashed potatoes is instead a puree of cauliflower bound with a bit of potato and sweet butter.  The underlying sweetness comes from garlic that gets boiled with the cauliflower.  Drink wine! Or drink beer! Lots of great suggestions on the show from beer maven, Jimmy Carbone, owner of Jimmy's No. Craft Beer Bar and Restaurant and co-founder of The Good Beer Seal awards.

Reddened Rib Eye with Pimiento Cheese (adapted from Radically Simple)

8 ounces very sharp yellow Cheddar 3 ounces pimientos from a jar, with 3 tablespoons brine 6 tablespoons mayonnaise 1 small cloves garlic 1-1/2 teaspoons sugar 1 teaspoon smoked paprika 1/2 teaspoon sweet paprika 4 thick rib eye steaks, about 12 ounces each 1/4 cup ground sumac

Preheat the broiler. Chop the cheese and put in a food processor with the pimientos, brine, mayonnaise, and garlic. Process until smooth; add salt and pepper. Chill. Mix together the sugar, both paprikas, and 1-1/2 teaspoons salt. Rub the steaks thoroughly with the mixture and let sit 10 minutes. Rub the sumac thickly on both sides of the steaks. Place on a rimmed baking sheet; broil as close to the heat as possible for 3 to 4 minutes on each side for medium-rare, or until desired doneness. Top each steak with a scoop of pimiento cheese. Serves 4

"Looks like Mashed Potatoes" (adapted from Eat Fresh Food)

1 large head of cauliflower, about 1-1/2 pounds 1 large baking potato 2 large garlic cloves, peeled 4 tablespoons unsalted butter 1/4 cup milk 6 tablespoons freshly grated Parmigiano-Reggiano

Bring a large pot of salted water to a boil. Cut the cauliflower into 1-inch pieces. Peel the potato and cut into 1/2-inch pieces. Add the cauliflower, potatoes, and garlic to the water. Continue to boil for 16 to 20 minutes, until the vegetables are soft (but not falling apart.) Drain well in a colander and shake dry. Add the cauliflower, potatoes, and garlic to the bowl of a food processor and process until smooth and creamy.  Add the butter, milk, and 4 tablespoons of the cheese.  Process until very smooth.  Add salt and pepper to taste.  Serve immediately, sprinkle with the remaining cheese.  Or you may make the mixture ahead:  Spoon it into a shallow casserole and sprinkle it with 2 tablespoons cheese. Bake at 350 degrees until heated through and run it briefly under the broiler until golden.  Serves 6

Baking with Olive Oil: Cookies, Muffins, and more

I have had the pleasure of hosting Martha Stewart's radio show "Cooking Today" this week on Sirius XM 110.  We've been covering lots of hot topics, including the new fresh extra-virgin olive oil coming from Chile. Olive oil is a sacred ingredient -- first mentioned in the Hebrew Bible in the 13th century BC, but there is evidence that it has been cultivated for the last 4000 years. So, I pay close attention to its importance. I use only two cooking oils at home -- olive oil and extra-virgin olive oil. That's it! I use one for cooking, sauteing and baking, and extra-virgin olive oil for salads, cold preparations and for "finishing dishes." Adding a sheen of extra-virgin olive oil on a bowl of soupy beans, or pasta, or a vegetable stew is like adding layers of complexity and "meatiness."  I am known to use olive oil in unusual ways, too.  I freeze it and use it instead of butter to emulsify a dish or to spoon over hot pasta for great texture; I was the first to make olive oil ice cream for the International Olive Oil Council (along with the chef from San Domenico, Odette Fada in the 1980's!), and I bake with olive oil all the time. For the recipes that follow, I use a good-quality extra-virgin olive oil if it is not too heavily flavored, regular olive oil, or a combination of both.  Baking with olive oil is quite healthy and it results in a special textured "crumb." All the recipes are adapted from my book Eat Fresh Food: Awesome Recipes for Teen Chefs, and all use self-rising flour, so be sure to get some. This would be a great Father's Day gift from your teens to their dad and a great activity to do together: to cook the book!  Olive-Oil Chocolate Chip Cookies  These cookies look so professional -- like something you might find in an Italian bakery. The bonus is that they are much healthier than ordinary chocolate chip cookies. They are also delicious coated in sesame seeds instead of chocolate.

2 cups self-rising flour 2/3 cup sugar 2 extra-large eggs 1/2 cup olive oil 1-1/2 teaspoons pure vanilla extract 1/2 teaspoon pure almond extract 6 ounces miniature chocolate chips

Preheat the oven to 325 degrees.  Put the flour and sugar in the bowl of an electric mixer.  In a separate bowl, whisk together the eggs, olive oil, and vanilla and almond extracts. Add the wet mixture to the flour mixture and mix until a smooth dough forms. The mixture will be slightly crumbly and a little oily. Knead several times on the counter. Form into 24 balls and then shape into small ovals that are 1-1/2 inches long and 3/4 inch wide.  Roll the tops and sides in miniature chocolate chips.  Line a large rimmed baking sheet with parchment paper or a Silpat pad. Place the cookies 1 inch apart. Bake for 25 minutes, or until firm to the touch. Remove from the oven and let cool on the pan. Remove with a spatula. Makes 24

Tender Muffins:  Country Pear, Cinnamon-Apple, or Blueberry These muffins are moist and delicate and can be made with ripe pears, tart apples, or fresh blueberries.  They are a cinch to prepare and last several days in a tightly covered tin.

1-1/2 cups self-rising flour 3/4 cup granulated sugar 1 teaspoon ground cinnamon (or 1-1/2 teaspoons if using apples) 1 extra-large egg 1/2 cup buttermilk 1/3 cup olive oil 1-1/4 cups diced peeled apples, or peeled ripe pears, or blueberries 2 tablespoons turbinado sugar (sugar-in-the-raw)

Preheat the oven to 350 degrees.  Line 9 muffins tins with paper liners.  Stir together the flour, sugar and cinnamon in a large bowl.  In a medium bowl, beat together the egg, buttermilk, and olive oil. Pour the wet mixture into the dry mixture and stir with a flexible rubber spatula until a batter forms. Gently stir in the fruit. Scoop the batter into the muffin tins. Sprinkle with the turbinado sugar. Bake 25 minutes or until golden and firm to the touch. Let cool. Makes 9

Very Moist Zucchini-Banana Cake You will love this cake, also called tea bread, as its mysterious flavor and moisture comes from a ripe banana and a zucchini!  Nice with a scoop of homemade ice cream for dessert, or with a cup of coffee for a mid-morning snack.

1 large zucchini, about 10 ounces 2 extra-large eggs 3/4 cup turbinado sugar (sugar-in-the-raw) 2/3 cup olive oil, plus more for greasing the pan 2 teaspoons pure vanilla extract 2 teaspoons ground cinnamon 1 very ripe medium banana 1/2 cup golden raisins 1-1/2 cups self-rising flour

Preheat the oven to 350 degrees.  Wash the zucchini and dry; do not peel.  Grate the zucchini on the large holes of a box grater to get 2 cups.  Using your clean hands, squeeze the zucchini dry.  In the bowl of an electric mixer beat the eggs and sugar on medium-high for 3 minutes.  Add the oil, vanilla, and cinnamon and beat for 30 seconds.  Peel the banana and break it into small pieces. Add the banana to the bowl.  Beat until the banana is incorporated and the mixture is smooth. Stir in the zucchini and raisins, then slowly add the flour and mix well.  Lightly oil a nonstick 8-x-4-inch loaf pan. Pour in the batter and bake for 55 to 60 minutes, until firm and golden. Let cool.  Serves 8

Tastes of the Week

June 4 through June 11, 2012 This was a crazy week of eating, press events, and socializing. How did we ever do it when we were young travelers -- eating two meals out, day after day. I really crashed at the end of the weekend when all I could do was eat animal crackers. Ha! What made me think of animal crackers?! I think it was a trip to my second carousel this month. This time it was at Prospect Park. (Several weeks ago it was the new carousel in Dumbo.)  We were there to celebrate the 100th birthday of the beautiful carousel, complete with a beautiful "carousel cake" made by Hudson Cakery (located in Weehawken, NJ.)  The cake was delicious and all around it were small horses made out of a kind of hard sugary fondant.  The excursion through Prospect Park and a visit to the Vale of Cashmere was courtesy of the Prospect Park Alliance, which continues to restore the park to its former Revolutionary glory. It is still glorious, however, and frequented by families, dogs, frisbee throwers, bikers, capoeira dancers, marathon runners, barbecue-ers, sightseers, drummers, and carousel goers.

Taste highlights: Wonderful, homemade string cheese!, compliments of Laurie Sandow, who, with her friend Midge, twisted many braids of the delicious cheese and was thoughtful enough to share some of it with me.

Freaking good fresh figs, compliments of the California fig advisory board. A "fig feast" at abckitchen.  Standout: honey-glazed turnips and fresh figs with rosemary and lemon.

A trip to Sunset Park, Brooklyn to Ricos Tacos at 505 51st St. (near 5th avenue) for tacos al pastor (marinated pork), tacos especiales with crispy tripe, and huarache grande (a sole-shaped flour tortilla) topped with ground meat and cheese. We'll be going back for the carnitas burrito which looked big enough to feed four.

A Lebanese banquet of mezze at ilili on 5th avenue. Chef Philippe Massoud has brought Lebanese food to "four-star" status.  We especially loved the "sliders" (ask for them -- they melt in your mouth), mouhamara w. walnuts, sundried peppers and pomegranate molasses, the shankleesh (a salad of feta, tomato, onions and za'atar), washed down with an excellent (and rather inexpensive) white wine from Lebanon, Masaya blanc, 2010.  

A fabulous lunch at Gramercy Tavern with star chef Michael Anthony.  Loved the fourchu lobster "salad" and monkfish with nettles -- one of the most sublime fish dishes I've ever had.

A lovely "media" dinner sponsored by Olive Oil from Chile at chef Todd English's restaurant Olives, located at the W Hotel near Union Square.  Standouts: the extra-virgin olive oil mini martini, Hudson Valley foie gras potage. olive oil tres leche cake with caramelized honey ice cream (and figs!  'Tis the season.)

Radically Delicious Figs: Two Recipes

Fresh Figs in Nightgowns On one of the hottest days of the year, in my air-conditionless pantry, my Nutella (chocolate-hazelnut spread) had become the consistency of molten chocolate. As it is quite sweet, I mixed it with yogurt, and one by one dipped a whole basket of fleshy purple figs into the mixture. I placed them in the refrigerator, whereupon the coating firmed up to make a very seductive dessert. My husband named them. Almost all of the fresh figs grown in the U.S. come from California.

12 large ripe purple fresh figs 1 cup Nutella 1-1/2 cups plain yogurt Wash figs and pat dry. Set aside. Put Nutella in a warm place so that it is easy to spoon. Or place the jar in a bowl of very hot water. Spoon yogurt into a clean bowl. Whisk in 1 cup Nutella until completely smooth.  One by one, dip each fig into the mixture, holding it by its stem.  Cover each fig completely or almost completely with a thin coating. Place on a large plate lined with waxed paper. Refrigerate until very cold. Serve with a few tablespoons of plain yogurt alongside. Present on fresh fig, grape or lemon leaves. Serve immediately with a fork and a knife.  Serves 4

Fresh Figs & Shaved Halvah with Warm Honey Syrup Here's an unorthodox but compelling combo of luscious fresh figs and thin slices of nutty halvah, a dense confection that resembles, at times, shards of cheese.  This dish offers a good opportunity to try an interesting variety of honey such as wild thyme, linden or leatherwood honey (from Australia.)

1/2 cup fragrant honey 12 ripe large black or green figs, or a combination 6-ounce chunk of pistachio, or other flavor, halvah handful of fresh red currants, chopped pistachios, or slivered spearmint

Combine the honey and 2 tablespoons water in a small saucepan and boil for 1 minute, stirring constantly. Remove from the heat and keep warm. Wash the figs and cut them in half, lengthwise. Arrange, cut side up, on 4 large plates. Cut the halvah into paper-thin slices. Drizzle the honey on the figs and scatter the halvah on and around the figs. Garnish with currants or nuts, or spearmint.  Serves 4

Insanely Delicious Fresh Figs

I had a wonderful meal a few nights ago, at abckitchen in New York City, sponsored by the California fig advisory board. I am crazy about figs yet know very little about them. Dried figs were what we ate at home; fresh figs were a luxury. While we were a table of "Eves" the other night -- no "Adams" -- we ate like queens and I never imagined fig season would be welcomed with such open arms. Fresh, perfectly ripe, Black Mission figs dotted the menu that I shared with a round table of food editors from Oprah, Reader's Digest, Weight Watchers, et al. It was the ultimate girl's night out. I loved the black mission figs draped with prosciutto and set in a nest of balsamic-spiked wild arugula; I swooned over the honey-glazed turnips with figs, rosemary and lemon, and really enjoyed the individual baked Alaskas with fig ice cream and cinnamon spice cake. Clearly the chef, Dan Kluger, loves figs, too. The ancients considered figs to have magical, medicinal powers, an idea supported by scientific evidence that figs were cultivated, in Jericho, more than 11,000 years ago.The great writer Lawrence Durrell once said about olives, "a taste older than water." The same could be said about figs.

California produces 100 percent of the country's dried figs and 98 percent of its fresh figs, of which more than half get shipped to Canada. The season begins mid-May and extends, surprisingly, all the way to mid-December; mid-August is when it's in full swing. In fact, more than 20 years ago, the first day of my new job working for the legendary restaurateur, Joe Baum, on August 15, I prepared a "birthday breakfast" for him -- one of my homemade Venetian wine cakes (made with olive oil, red wine, rosemary and lemon) and chose, one by one, 24 perfectly ripe fresh figs from the Union Square Farmer's Market, near our office. The figs had been warmed by the sun and were a stunning accompaniment to the cake and coffee. It was one of my favorite "fig memories." At dinner the other night, we asked, one by one, to share our favorite fig memory. It was lovely to hear the responses: from eating them off a tree on a honeymoon to a wistful sharing of a father's fig tree that bloomed only after he had passed away. One woman at the table had never had a fresh fig and was deemed "fig virgin" of the evening.

Apparently there are five primary varieties of figs grown in California, yet there are hundreds and hundreds of species grown around the world. The five in the U.S. are Black Mission, calimyrna, kadota, brown turkey, and sierras. And there is a newer variety known as "tiger fig" with a green-striped overcoat that revels a raspberry-red interior. I liked the way that Karla Stockli, the CEO of the fig board, described the figs -- as though describing the nuances of wine! Black Mission figs with purple-black skin and deep earthy flavor are likened to a cabernet. Calimyrna, with its pale yellow skin and buttery, nutty flavor are (you guessed it!) chardonnay-like; Kadota has similar notes to sauvignon blanc; brown turkey with a light purple skin and floral notes are likened to pinot noir, and sierra with their light-colored skin and fresh, sweet flavor are Riesling-esque.

And it's good to note that three to five fresh or dried figs provide 5 grams of dietary fiber (or 20 percent of the daily value.)

The photo here is a recipe for fresh figs that I created a decade ago for my book, Desserts 1-2-3 (which landed on the L.A. Times "Hot List" and chosen as one of the best books of the year by Food & Wine Magazine). Dipped in a thin coating of melted chocolate and yogurt, my husband named them "figs in nightgowns." I will share the recipe tomorrow. They are insanely delicious.
